This recipe for gluten-free cookies is not only for those who follow the "celiac diet" but for all gluttons who like homemade cookies, from those to eat for breakfast or a snack, to those perfect to accompany coffee or tea to indulge in a happy and appetizing moment.

The ingredients of gluten-free cookies

Gluten-free cookies indeed have many merits and no flaws! They are easy to prepare and in very few minutes; crumbly, light because they are made with rice flour, margarine and eggs; they are very tasty, thanks to the almonds grains, chocolate chips and the scent of orange that give the palate an explosion of different flavors and textures and a unique and mouthwatering taste!!!

If you can't wait to make these gluten-free cookies, all you have to do is read the recipe below, but if you want to speed up the preparation time, we recommend that you put the already weighed ingredients on your work table and heat the oven at the right time!

Preparation of gluten-free cookies

  1. The first thing to do is to mix 250 g of sifted rice flour in a bowl with 60 g of sugar.
  2. Add 100 g of room-temperature margarine and 1 egg and start working the mixture until it reaches a smooth, lump-free consistency.
  3. Grate the zest of half a washed and dried untreated orange and add it to the mixture.
  4. Then add 1/2 sachet of baking powder and the dark chocolate chips.
  5. Place a handful of almonds back into the glass of a pulse blender and coarsely chop them, then aggregate them with your gluten-free cookie dough, then knead to blend them into the mixture.
  6. Wrap the dough in a layer of plastic wrap and let it rest in the refrigerator for about 20 minutes.
  7. After the necessary time has elapsed, place the mixture back on a pastry board and with the help of a little rice flour and a rolling pin, roll out the dough first and then shape your cookies any way you like using special cookie cutters. Or, create small balls with your hands and then apply light pressure to flatten them.
  8. Line the baking sheet with baking paper, lay the gluten-free cookies on it and bake them in a static, preheated oven at 180° C for about 10 to 15 minutes.
  9. When they are golden brown and puffy, remove them from the oven and let them cool for a few minutes.
Your gluten-free cookies are ready: if you like, you can add a pinch of cinnamon to make this recipe a bit wintry or replace the orange zest with lemon. Enjoy!
