2.Needed:
  • For the short crust pastry
  • 300 gr type 00 flour
  • 130 gr soft butter
  • 80 gr sugar
  • One whole egg and one yolk
  • Grated zest of one lemon
  • Vanilla baking powder (1 teaspoon)
  • A dash of milk
  • For the lemon cream:
  • 3 eggs
  • 200 g sugar
  • 60 gr flour
  • Baking powder (half a teaspoon)
  • Lemon juice (eight tablespoons)

3.The recipe (part one)

Take care of the short crust pastry first. Grate the lemon zest, then combine sugar, eggs, flour and (soft) butter and knead. Wrap the resulting mixture in plastic wrap and leave it in the refrigerator for half an hour. After this time has elapsed, roll out the dough in a tart pan and bake for 20 minutes at 180 degrees in a preheated oven.

Meanwhile, take care of the lemon cream. First, sift flour, sugar and baking powder into a bowl. Add the eggs and mix with a wooden spoon until the ingredients are mixed well.
