Spring Onions Quiche

This delicious spring onion quiche is perfect to take with you wherever you go. It can also be enjoyed as an aperitif to tantalize your taste buds. As well as being tasty, it's quick and easy to make!

Ingredients:

Shortcrust pastry
  • 200 g flour
  • 100 g cold butter
  • 1 half teaspoon salt
  • 8 cl water

Topping
  • 3 spring onions
  • 20 cl milk
  • 10 cl single cream
  • 3 eggs
  • salt and pepper

Steps:

1. First, make the shortcrust pastry. Using a food processor or by hand, work the flour, butter and salt into a crumbly dough resembling coarse sand.

2. Form a well and pour in the water. Knead (but not too hard) until you have a soft dough. Wrap in cling film and chill for 30 minutes.

3. Dice the chicken and sauté in a drizzle of olive oil. Set aside.
4. In a bowl, whisk the eggs with the milk and cream. Season with salt and pepper.

5. Preheat oven to 220°C. Meanwhile, roll out the dough on a floured work surface into a disk about 3 mm thick. Place in a pie dish and prick with a fork.

6. Rinse the spring onions, then start by cutting off the bottom end. Then remove the tops of the stems, keeping only the greenest, firmest part.

7. Starting at the top, remove the first skin from the onion. Chop finely and arrange on the tart base.

8. Pour the mixture over the top and bake for 30 minutes.

Enjoy your spring onion quiche hot or cold!
