Desserts with apples are a real treat and among them apple pie is a great classic, a grandmother's recipe that reminds many of us of childhood snacks. I love it and make it in a thousand different versions. This time I want to offer you a lemon apple pie that is really easy to prepare and has a citrusy and delicate taste, perfect at any time of day!

Lemon apple pie: how to prepare it

With this recipe we are going to make a simple and rustic-looking apple pie, with a soft dough that stays nice and moist thanks to the presence of lots of apple slices.

To prepare the dough we start by whisking together eggs and sugar, and when the eggs are nice and puffy we proceed with the addition of the other ingredients: first the seed oil (I use sunflower seed oil), then grated zest and juice of a nice untreated lemon. At this point we incorporate the flour several times and finally add the baking powder.

Once we have a smooth and homogeneous dough, let's move on to the apples: we will have to peel them, cut them into wedges and then slice them with a mandoline directly into the dough (but we can also slice them with a knife or cut them into easily amalgamated small pieces). After pouring and leveling our dough into a greased, floured 24-cm-diameter cake pan with a disc of baking paper on the bottom (to prevent the cake from sticking) we can decorate with a generous sprinkling of caster sugar (or brown sugar, if we prefer), which will make the surface of the cake golden and slightly crispy.

Finally, all that remains is to bake for about 45 minutes at 170 °C in a ventilated oven, and the lemon apple pie will be ready to enjoy! It is perfect for breakfast as well as for an afternoon snack or tea time. But it is also a great dessert at the end of a meal and fits all menus!

Ingredients for 8 people:

  • 3 eggs
  • 160 g sugar to taste for the surface
  • 100 g seed oil
  • 250 g flour
  • 8 g baking powder
  • 1 lemons for zest and juice
  • 3 apples large

How to Make: Lemon Apple Pie

 Let's prepare our dough: in a bowl, we break the eggs and whisk them with the sugar until the mixture is light and puffy.

 We add the seed oil to follow and continue mixing.

 At this point we grate the lemon peel and add it to the dough.

 Let's also squeeze out the juice (we will get about 50 ml) and pour it into the bowl, resuming mixing.

 Let us now add the flour, incorporating it a little at a time.

 Finally, we add the baking powder and stir again to mix it in.

 Now let's move on to the apples: first, let's peel them and cut them into wedges.

 Let us slice them with a mandoline directly into the mixture, trying to make slices about 2-3 mm thick.

 Let's mix the apples into the rest by stirring with a spatula.

 Let's pour the dough into a greased and floured 24-cm-diameter cake pan with a disk of baking paper on the bottom to prevent sticking.

 We level it well and then sprinkle the surface with a few handfuls of caster sugar. We bake in a preheated ventilated oven at 170 °C for 40-45 minutes (with a static oven we increase the temperature by 10 degrees).

 Once cooked, we take the cake out of the oven and let it cool before removing it from the mold, so we avoid breaking it. And here is our lemon apple pie ready to enjoy in all its goodness!

As for what kind of apples to use, any will do: we use the ones we have at home that we need to use up, cutting them into thin slices as I did or into small pieces. We don't have apples but pears? They will be perfect just the same and we will get a rustic and tasty pear cake.

To flavor the dough you can add cinnamon powder, which goes well with apples, or vanilla flavoring, which goes well with the lemon flavor. And for a more unusual combination, you can grate some ginger, which goes perfectly with both lemon and apples!

If we want to enrich our apple pie, we can then add dried fruits such as raisins, walnuts, hazelnuts and chopped almonds to the dough.

Do we need to make a gluten-free apple pie? Very simple: just replace the 250 grams of flour with 180 grams of rice flour and 80 grams of cornstarch (or potato starch).

Storage:

Lemon apple pie can be stored at room temperature in cold weather, well covered by foil or inside a food container. But if it is hot in the house, let's put it in the refrigerator and then take it out a few minutes before consuming it. If we want, we can also heat it for a few seconds in the microwave or air fryer.
