1. The iconic tiramisu

You don't have to be a coffee lover to appreciate tiramisu, the iconic Italian dessert. And to make a success of your recipe, don't hesitate to use a good coffee, such as L'Or Espresso coffee beans.

Ingredients:

  • 250 g mascarpone
  • 50 g sugar
  • 3 eggs
  • 1 glass coffee
  • Amaretto or rum
  • 1 packet boudoirs
  • cocoa powder

Preparation steps:

1. Whisk the egg yolks with the sugar until the mixture whitens. Add the mascarpone and alcohol, mixing well, then set aside in a cool place.

2. Beat the egg whites until stiff, adding a pinch of salt. Gently fold into the previous mixture using a spatula.

3. Dip the sponge fingers in the coffee, then place them in the bottom of a large dish.

4. Cover the boudoirs with half the cream, then place a second layer of soaked cookies and pour over the rest of the mixture.

  • 4 eggs
  • 150 g flour
  • 150 g sugar

Buttercream:
  • 240 g butter
  • 160 g sugar
  • 65 g water
  • 4 egg yolks
  • 25 ml coffee extract

Meringue:
  • 2 egg whites
  • 75 g sugar
  • 30 g water
  • 20 g sugar

Syrup:
  • 125 g sugar
  • 20 cl ground coffee
  • 5 cl rum

Preparation steps :

1. Start by preparing the sponge cake: whisk the eggs with the sugar until the mixture triples in volume. Then fold in the sifted flour with a spatula.

2. Pour the batter into a buttered and floured mold and bake for 25 minutes at 160°C. Turn out of the tin and leave to cool on a wire rack.

3. Meanwhile, prepare the syrup: heat the coffee with the sugar. Add the rum as soon as the sugar has dissolved and set aside.

4. Now prepare the buttercream: whisk the egg yolks and pour into a saucepan with the water and sugar. Heat until the temperature reaches 118°C, then add the butter and whisk again.

5. Finally, prepare the meringue: beat the egg whites until stiff, then, when they begin to foam, add 20 grams of sugar while continuing to whisk. Pour the syrup over the stiffly beaten egg whites at high speed.
