This is not a random choice; on the contrary, it recalls a fascinating custom widespread especially in Northern Europe. I'll tell you about it: long ago, on Christmas Eve, the head of the family would put just such a yule log to burn in the fireplace. According to legend, this piece of wood even burned until Epiphany. The Christmas yule log is simply a roll of cookie dough filled with cocoa ganache, berry jam and then decorated. For a more realistic effect, we can reproduce the natural wood grain by pressing with the tines of the fork. The finishing touches? A sprig of pine, a few currants and a dusting of powdered sugar that makes you think of ... a light snowfall!

But what if the snow was more plentiful? We have the snowy Christmas yule log! A delicious flourless variant with a filling made with hazelnut cream, whipped cream and coconut flour.
