Hello, we're back together today for a slightly lighter article, namely a recipe for fluffy vegan pancakes.

These pancakes are very simple and quick to make, but they're no less delicious! I won't keep you waiting any longer, just give you the recipe!

Ingredients for about 6 pancakes :

  • 60g wheat flour
  • 40g oat flour
  • 120g vegetable milk. For my part, I used soya milk.
  • 110g applesauce
  • 1 teaspoon baking powder
  • 1 tablespoon cider vinegar
  • 20g cornstarch
  • Vegetable oil for cooking

Preparation:

1. First, blend the rolled oats in a blender/mixer to obtain oat flour.

2. In a mixing bowl, combine the plant milk and cider vinegar.

3. Then add the applesauce. I didn't add any sugar to the mixture because I often eat my pancakes with lots of spread, but you can add some if you like. Avoid white sugar and use blond or coconut sugar instead.

4. You can also add a little vanilla.

5. Add the wheat flour, oat flour, baking powder and cornstarch to the previous mixture. Mix until smooth.

6. Put a little vegetable oil in a hot frying pan and pour in a little batter, making a small pile. The batter will spread slightly as it cooks, but your pancakes will be soft and fluffy.

7. When small bubbles form on the surface, you can turn your pancake over with a spatula to cook the second side. My griddle gets very hot, so I let my pancakes cook for about 1 minute on each side. It's up to you to adjust the time to suit your griddle.

8. Repeat the operation, oiling the pan between each pancake if necessary.
