Oatmeal coconut cookies are simple and tasty treats that we can prepare at home in no time and enjoy for breakfast or snack. These cookies are perfect to start the day with gusto, as the fragrance and crunchiness of oatmeal meets the fragrance and lively flavor of coconut giving us the perfect breakfast treat!

In addition to breakfast, enjoyed along with a cup of latte, with a pot of yogurt or with homemade juice, these butterless cookies are also perfect for snack time. We can take them to school and the office, put them in our bags or backpacks and enjoy them whenever we feel like it.

Oatmeal coconut cookies without butter: how to prepare them

We prepared very simple cookies, without butter and with little sugar, with oat flakes, coconut flour and 00 flour. To "push" the somewhat exotic and fresh coconut flavor, we also added vanilla and grated lemon zest. We can also create other versions using the spices and flavorings we like best, such as orange or tangerine zest, or cinnamon.

Making these cookies is a breeze. We mix the liquid ingredients with the sugar and flavorings and then separately mix the dry ones. Finally, we combine the powders with the liquids, knead and let rest for about 20 minutes. The rest is very important because the oatmeal coconut are dry and need to rehydrate a bit due to the presence of the liquids. At this point we form small balls, crush them with our fingers and bake our cookies in the oven for about fifteen minutes.

Tips

We can enrich our oatmeal cookies with dark or white chocolate chips, but also frost them in melted chocolate after baking: they will be even more delicious and yummy!

Alternatively, if we do not want to use chocolate, we suggest you try mixed nuts.

Storage

After allowing the oatmeal coconut cookies to cool for a few minutes after baking, we can store them for a few days in an airtight container so they stay soft and tasty.

  • 1 egg
  • 60 ml seed oil
  • 100 g sugar
  • 180 g 00 flour
  • 100 g oatmeal
  • 70 g coconut flour
  • 40 ml milk
  • 8 g baking powder
  • 1 pinch fine salt

To make oatmeal coconut cookies, we start by breaking an egg in a bowl and adding sugar. We mix with a whisk or fork so that the sugar crystals are dissolved.

We add the seed oil and then milk and mix well.

Finally, we combine the flavorings: a teaspoon of vanilla extract and the grated zest of a lemon. We mix everything together and set aside.

In another bowl we put the dry ingredients: the oatmeal, flour, salt and coconut flour and mix.

We combine the baking powder and mix so that it is evenly distributed.

We pour the liquid ingredients into the bowl with the dry ingredients and mix, first with a spoon and then with our hands.

We will have a fairly compact dough because the oats and coconut, which are dry, will absorb the liquids. We let the dough rest for 15 to 20 minutes.

At this point we can make our cookies. Helping ourselves with a teaspoon, or cups scoop (as we did), we take portions of the dough.

We form flat balls and place them on a baking sheet covered with parchment paper.

We bake the oatmeal coconut cookies in a preheated static oven at 180 °C for 15 minutes or in a fan oven at 170 °C for the same time.

Once baked, let them cool slightly and we are ready to enjoy these delicious oatmeal coconut cookies!
